Researchers at the University of Nebraska-Lincoln have conducted a study on how introducing information about the health and environmental impacts of large portion sizes can influence consumer behavior. The study, published in Food Quality and Preference, showed that when participants were presented with infographics about the benefits of choosing smaller portion sizes, their preference for larger sandwiches decreased. This shift was more significant when the information was presented sequentially rather than simultaneously.
Led by postdoctoral researcher Hanin Hosni and professors Christopher Gustafson and Simanti Banerjee, the research highlights the potential for information to promote healthier food choices and reduce food waste. The study suggests that cooperation with the food industry may be necessary to implement policies encouraging smaller portion sizes.
